Bridgewood Students Learn the Art and Science of Maple Syrup Making

March 26, 2019 (Cornwall, ON) - Students at Bridgewood Public School are in their second week of making maple syrup, a unique experience for many of them. The students tapped a total of 40 trees on the school’s property and have collected more than 50 gallons of sap so far.

Learning Resource teacher Mike Vingerhoeds and his father, Gerry Vingerhoeds, have been spearheading this experiential learning opportunity at the school since it first opened in 2016.

Gerry volunteers at the school each year for the mini-maple syrup season. He helps with the daily boiling of the sap, engages students in the process and shares his 20+ years of knowledge of maple syrup making.

“The whole school is involved in the process,” explains Gerry. “The students help tap the trees and they are responsible for collecting the sap each day.”

It takes approximately 40 gallons of sap to make one gallon of syrup, and sap should remain at a consistent boil. Gerry spends about six hours a day at the school boiling the day’s sap.

This initiative has been primarily linked with the mathematics curriculum at the school.

“Teachers are bringing the maple syrup conversation back to their classroom,” explains Mike. “We have classes measuring the sap collected each day and comparing it to the weather; we have other classes figuring out the cost of producing and selling the syrup; and we even have classes measuring the circumference of the trees that they will compare to next year.”

This is a unique opportunity for Bridgewood students as many of them live in the City of Cornwall. While some may visit a sugar bush, few would have the opportunity to be involved in syrup making.

The school is planning to test out the maple syrup at a school-wide pancake breakfast. St. Lawrence Secondary School students will make and donate the pancakes for this event.
